In reply to Lori. I did this initially, but after making them so many times I found that it just makes no difference- the cookies are baked either way! So I opted to save time and just shape them after. : )

Just wondering why you do not shape the cookie dough into a tart shape before you bake them? Seems like the middle of the cookie would be unbaked.

In reply to Kim. I wouldn't recommend freezing the cookies once they've been filled because the filling will make the cookies very soggy as they thaw. Unfilled cookie cups can be frozen in an airtight container for up to 3 months.
