These are very good. I have to admit that they were a little dry when first trying them, but the next day they had softened a bit and I liked the texture better. I made a mistake of adding too much peppermint extract to the frosting so it overpowered the cookie flavor. But all-in-all, these are excellent. The batter mixed up beautifully and baked nicely. Great recipe!

In reply to Peggy. Yes, you can freeze them! I like to freeze the baked cookie bars in the tray and then frost them after I defrost them, but you can freeze with the frosting on as well.

I really want to try this recipe. Cut outs with frosting are my absolute favorite cookies for Christmas. Can you make these ahead of time and keep in an air tight container and place in a cool location? I would like to make them today but keep for Christmas Eve. Has anyone make the cookie crust and then waited to frost?
