I had been looking for a recipe to inspire me to start using my canned pumpkin and this was it. Like a bite of pumpkin pie in a simple to make and eat cookie!

Soft and chewy cookies are my absolute favorite, and these glazed pumpkin ones are pretty much perfect! So delicious! We ate them all in just a day or two!
