<p>Making eggnog oatmeal cookies is easy! Here are a few tips to getting perfect cookies every time!</p>

<li>Most cookie recipes require that you mix the dry ingredients separately before adding the wet ingredients. This is an important step!</li>



<li>Preheat the oven. This will help your cookies turn out right every time!</li>



<li>Use a&nbsp;<a href="https://amzn.to/2usDloF" target="_blank" rel="noreferrer noopener nofollow">cookie scoop</a>! If you want all your cookies to be perfectly shaped and have them all be the same size, a cookie scoop is the way to go.</li>



<li>Use&nbsp;<a href="https://amzn.to/2E02Flc" target="_blank" rel="noreferrer noopener nofollow">parchment paper</a>&nbsp;or a&nbsp;<a href="https://amzn.to/2GukdeL" target="_blank" rel="noreferrer noopener nofollow">silicone baking mat</a>. Doing this will make it really easy to remove the cookies from your cookie sheet so that you don&rsquo;t have to scrape them off the pan &ndash; they will just slide right off in perfect shape!</li>



<li>Don&rsquo;t over bake the cookies &ndash; when I take mine out of the oven, they still look slightly under baked but they will continue to bake on the cookie sheet for a couple more minutes so that&rsquo;s ok!</li>

<h2 class="wp-block-heading">Ingredients in <strong>Eggnog Oatmeal Cookies</strong></h2>



<p><strong>Sugars</strong> &ndash; You will need brown sugar and granulated sugar to provide the sweetness in the cookies. For best results, make sure your brown sugar is fresh and soft. </p>



<p><strong>Shortening</strong> &ndash; You can use regular shortening or butter-flavored shortening. You can use butter instead, but the cookies will be more likely to spread when baking. </p>



<p><strong>Egg</strong>&nbsp;&ndash; One large egg will help to bind all of the other ingredients together.</p>



<p><strong>Eggnog</strong> &ndash; Use any brand or variety of eggnog that you&rsquo;d like! </p>



<p><strong>Vanilla extract</strong> &ndash; The higher the quality of vanilla, the better!</p>



<p><strong>Eggnog extract </strong>&ndash; I&rsquo;d never used <a href="https://amzn.to/3GW272Y" target="_blank" rel="nofollow">eggnog extract</a> until this recipe, and it can be a little tricky to find, but it really does add so much flavor to the cookies! </p>



<p><strong>Nutmeg </strong>&ndash; You just a little bit, but the ground nutmeg pairs so well with the eggnog. You can swap it out with cinnamon or add a little bit of both if you&rsquo;d like!</p>



<p><strong>Oats</strong>&nbsp;&ndash; I prefer old-fashioned oats in these cookies, but you can use quick oats if you prefer. Or even a combination of the two!</p>



<p><strong>Flour&nbsp;</strong>&ndash; I usually use all-purpose flour, but you can use wheat flour if you&rsquo;d like. It will make the cookies more dense and change the consistency a little bit, but they are still delicious!</p>



<p><strong>Salt</strong> &ndash; Just a little bit of salt will help intensify the other flavors in the cookies. </p>



<p><strong>Baking soda</strong> &ndash; This is the leavening agent in the cookies. For best results, make sure it isn&rsquo;t old or expired. </p>



<h4 class="wp-block-heading">EGGNOG ICING</h4>



<p><strong>Powdered sugar</strong>&nbsp;&ndash; Powdered sugar will provide sweetness to the icing, along with a smooth creamy texture.</p>



<p><strong>Eggnog</strong> &ndash; This will provide the liquid for the icing. Feel free to add a little more or a little less to get the glaze to the desired consistency. </p>



<p><strong>Eggnog extract</strong> &ndash; Once again, <a href="https://amzn.to/3GW272Y" target="_blank" rel="nofollow">eggnog extract</a> will help add a lot of eggnog flavor. If you don&rsquo;t want a strong eggnog flavor, you could use vanilla extract instead. </p>

<p>In large bowl, use a hand mixer to beat the brown sugar, shortening and granulated sugar together for 2-3 minutes. Add egg, eggnog, vanilla extract and eggnog extract and beat for another 2-3 minutes.</p>

<p>In a medium bowl, combine oats, flour, salt, and baking soda, and mix well. Add dry ingredients to wet ingredients, and mix well.</p>

<p>Drop dough by rounded teaspoonfuls onto cookie sheets lined with parchment paper or silicone baking mats.</p>

<p>We recommend that you use eggnog extract to give the cookies and the glaze a more intense eggnog flavor, but if you don&rsquo;t have any, you can use vanilla instead. <p>You can use quick oats or old-fashioned oats in your cookies- it really comes down to a personal preference. I used old-fashioned oats in this recipe, but I often like to do a combination &ndash; half quick oats and half old-fashioned. It&rsquo;s totally up to you and what type of oats you have in your pantry! If you use all quick oats, the cookies will end up being a little bit more dense and a little bit puffier. I like the texture of old-fashioned oats because it make the cookies a little bit chewier (and also like I am eating real oatmeal which makes it easier for me to justify eating a few of these for breakfast!).</p>

<h2 class="wp-block-heading">HOW LONG ARE EGGNOG OATMEAL COOKIES GOOD FOR?</h2>



<p>These cookies are good for about 3 to 4 days if kept stored in an airtight container at room temperature or in the fridge. These cookies are best when served within a day or two. If you leave the glaze off, they will last up to a week. </p>



<h2 class="wp-block-heading">CAN I FREEZE FROSTED EGGNOG OATMEAL COOKIES?</h2>



<p>These cookies are great for freezing for later but I recommend waiting to frost them until after the cookies have thawed. If you frost the cookies before freezing the storage becomes harder with layers of baking paper to prevent sticking and the icing may melt or sweat as they thaw, looking less appetizing in the process.</p>

<p>There are a lot of flavored eggnogs out there including pumpkin, pecan pie, and peppermint. If you want to try these cookies with any of them, go right ahead. Whatever your favorite eggnog flavor is, it will probably taste equally delicious when you add it to your cookies! </p>
