Chocolate Chip Scookies are an incredible combination of two treats that make a perfect pairing. With this easy scone recipe, it is cookie meets scone in a wonderful blend of buttery dough and sweet chocolate drizzle!
Prep: Start by preheating the oven to 400° F. Next, line a baking sheet with a silicon mat or parchment paper then set it aside. Now measure out 4 tablespoons of sugar into a small bowl. The dough will be rolled in this before the baking process.
Dough: In a medium bowl, mix the flour, ⅓ cup sugar, baking powder, baking soda and salt. Then, grate the butter into flour mixture using the large holes of a box grater (mixture should resemble coarse meal.) This step sounds difficult but it is easy, but your hands might get a bit buttery. This step will take a couple minutes to grate the entire cube of frozen butter, but the effort is totally worth it.
Next, add in the sour cream, vanilla extract, egg and mini chocolate chips. Stir everything until the dough pulls from the side of the bowl and there are no crumbs on the bottom. The dough should be somewhat firm and sticky, but still be manageable.
Proceed to flour a countertop and use your hands to shape the dough into a rectangle that is about 1" thick. What you are doing is dividing the dough, so it does not have to be perfect. Then, use a pizza cutter to cut the rectangle in half lengthwise, so you now have 2 long sections. Now cut them in half length wise down the middle again. Lastly, cut each of those pieces 3 times vertically, creating 16 sections total.
Bake: Continue and gently pick up each section and roll it into a ball. Then, roll each ball in the small bowl of sugar previously prepared. Place each piece of dough on the prepared cookie sheet. Place in the preheated oven and bake until golden brown, for about 12-13 minutes. Let the scookies cool for about 5 minutes while you prepare the chocolate topping.
Chocolate topping: In a small microwave safe bowl, melt the semi sweet chocolate chips for 45 seconds. Then, cover the bowl with a small plate and let sit for about 2-3 minutes. After that, add in 1 tablespoon of butter to the chocolate mixture and gently stir. Proceed to microwave another 15 seconds (if needed) until the chocolate is fully melted.
Using a spoon, drizzle the melted chocolate on top of each scookie. Let cool to set, serve and enjoy!
