Ingredients

Chocolate Buttercream Frosting

butter
softened

powdered sugar

cocoa powder

milk
Instructions
Preheat the oven to 350°. Line a cookie sheet with parchment paper or a silicone baking mat and set aside.
Make the cookies:
In a medium mixing bowl, cream together butter and sugars for about 2-3 minutes. Add in eggs and vanilla extract and beat for another 3 minutes.
Add the flour, cocoa powder, baking soda and salt to the wet mixture and mix until well combined. Fold in rolled oats.
Use a cookie scoop or hands to form 1 in dough balls and place on prepared cookie sheet about 2 inches apart.
Bake for 10 minutes, remove from the oven and transfer to a cooling rack.
Make the frosting:
Cream together butter, powdered sugar and cocoa powder. Add in milk and beat until smooth.
Assemble the cookie sandwiches:
Use a piping bag or a knife to frost the bottom of half the cookies. Place another cookie on top to make a sandwich.
