Prep: Begin by lining two baking sheets with parchment paper or silicon mats, set them aside. Then get the oven preheating to 350°F.
Dough: In a large bowl, cream the butter and sugar using an electric mixer or Kitchen Aid. Add in the egg and beat again well.
Heat chocolate in a small bowl in the microwave for 1 minute. Let sit for 2 minutes, then gently stir. (Chocolate should be smooth, so add 15 second intervals in the microwave until it's fully melted. Do not overheat! Go slow and let the chocolate sit between intervals.) Pour into butter mixture.
Add buttermilk, vanilla and almond extract to butter mixture as well.
Combine flour, baking soda and salt in small bowl. Add to chocolate mixture in 2 additions, mixing well after each addition until no dry flour remains. Add walnuts and mix well.
Bake: Using a medium sized cookie scoop, measure about 1 ½ TBSP dough, roll it and place mixture about 2 inches apart onto ungreased cookie sheets.
Place cookies in the oven and bake for 10 to 12 minutes until firm. Let them stand on cookie sheets for 5 minutes before transferring to wire racks to cool completely.
Chocolate Icing: In a medium size bowl, beat all 4 ingredients together well using an electric mixer. Add more powdered sugar if necessary until it reaches your desired consistency. This recipe makes about 2 cups of frosting, spread about 2 tsp. on each cookie. Serve and enjoy!

These cookies will stay fresh for up to 5 days if stored in an airtight container at room temperature.Place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving. Wait to add frosting until defrosted and ready to enjoy.
