Chewy Coconut Cookies are made with a few simple ingredients such as flour, brown sugar, butter, baking powder, salt and coconut of course! This coconut cookies recipe creates a flavorful and chewy cookie that is sure to be a hit with anyone who tries them.
Dough: In a mixing bowl, cream butter, shortening and brown sugar for 2 minutes or until fluffy. Add eggs; mix well. Gradually add water and vanilla; mix well.
Whisk together flour, baking powder, baking soda and salt in a separate bowl; add to the creamed butter mixture. Fold in coconut.
Chill: Cover the bowl and refrigerate for at least 2 hours to chill the dough.
Bake: Get the oven preheated to 400°, then pull the dough out of the fridge.
Grease two baking sheets with non-stick cooking spray or you can use parchment paper or silicon mats as well.
Scoop dough into 1-inch balls, place 2 inches apart on baking sheets. Gently flatten with a sugared fork making a crisscross pattern on each cookies.
Bake: Place in the oven and bake for 8-10 minutes or until lightly browned. Cool 2 minutes before removing to a wire rack. Serve & enjoy!

These cookies will stay fresh for up to 5 days if stored in an airtight container at room temperature.Place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
