Instructions
Preheat oven to 350° F.
MAKE COOKIE DOUGH: In large bowl, use a hand mixer to beat the brown sugar, shortening and granulated sugar together for 2-3 minutes. Add egg, eggnog, vanilla extract and eggnog extract and beat for another 2-3 minutes.
In a medium bowl, combine oats, flour, salt, and baking soda, and mix well. Add dry ingredients to wet ingredients, and mix well.
BAKE COOKIES: Drop dough by rounded teaspoonfuls onto cookie sheets lined with parchment paper or silicone baking mats.
Bake 12 to 15 minutes, or until edges are golden brown. Let them cool for about 5 minutes before transferring to a wire rack to cool completely.
MAKE ICING: Once cookies have cooled completely, make the icing. Place powdered sugar, eggnog, and eggnog extract in a medium bowl and mix well until all lumps have disappeared. Spoon or drizzle icing over the top of the cooled cookies.
