Flourless Double Chocolate Cookies are soft, fudgy and have absolutely no flour in them! The perfect flourless cookie recipe, whether you need a gluten-free cookie or even if you just don't have any flour on hand!
Preheat oven to 350°. Line baking sheets with silicone baking mats or parchment paper. If using parchment paper, you'll want to spray a little bit of non-stick cooking spray on top of the parchment paper as well. This cookie dough is very runny and can stick very easily!
In a large bowl, mix together the powdered sugar, cocoa powder and salt.
Add egg whites and vanilla extract and mix just until combined with a spoon. Fold in the chocolate chips.
Use a cookie scoop to scoop batter onto prepared baking sheets. Make sure to leave at least an inch (or more) between cookies. They really won't spread much more while baking.
Bake for about 10-12 minutes. Let the cookies cool completely before transferring to a plate.
