Cast Iron Skillet Cookie made with chocolate chip cookie dough, then baked in a skillet & topped with vanilla ice cream. Easy skillet cookie recipe for cookie lovers!
Preheat oven to 325 degrees F. Grease a 10-inch cast iron pan with 2 TBSP butter.
In a medium bowl, mix the flour, salt and baking soda.
In a separate medium bowl, add the remaining softened butter, brown sugar and white sugar. Blend well with a mixer on medium speed until fluffy. Add the vanilla and eggs. Then mix until blended well.
Add about 1/3 of the flour mixture and mix in well on med speed. Continue to add the flour mixture in 2 more batches and mix well.
Add the chocolate chips and fold in with a spoon. Pour mixture into greased cast iron pan.
Bake for 35-40 minutes until just golden brown (careful not to overcook as the cookie will continue to cook in the pan after removing from the oven).
Cool for at least 15-20 minutes. Serve with ice cream on top.

Substitute gluten free flour for all-purpose flour (like Bob’s Red Mill One to One).If using a 12-inch cast iron pan, decrease baking time to 25-30 minutes.Add ½ cup chopped pecans or walnuts in desired.Dough can be made ahead of time and stored in an air-tight container in the refrigerator for up to 2 days. You can also freeze the dough for up to 3 months.Freeze any leftover slices in an air-tight container for up to 3 months.
