Brookies Cookies are the BEST combination of brownies & chocolate chip cookies! Homemade Brookies with great buttery, chocolate flavor for the perfect dessert!
Preheat the oven to 180°C / 350 °F and line two large baking sheets with parchment paper and set them aside.
To make the brownies, take a large bowl and mix together the melted butter, sugar, and cocoa powder. Mix till the batter becomes smooth. Add eggs one at a time and mix well. Add the vanilla extract and mix till the batter becomes glossy. Add flour and salt and mix it in the batter. Don't over mix. Refrigerate while you make chocolate chip cookie dough at least for an hour.
To make the chocolate chip cookies, take a large bowl and put the butter and sugars in it. Using a hand mixer beat it together until it becomes light and fluffy. Add egg and vanilla and beat till it's combined well. In another bowl, combine the dry ingredients and whisk together. Now mix the dry ingredients to the wet ones a little at a time. Lastly, add in the chocolate chips and mix just until combined. Refrigerate at least for an hour.
Once both the dough are ready, take a small cookie scoop and scoop out a mini ball size dough from each dough, and roll it together with your hands, giving it a round shape. Repeat with the rest of the dough. Recipe yields 24 cookies total.
Place them on the prepared baking tray. Bake for 15- 18 mins or till the edges turn golden. Let them cool for five minutes in the tray before transferring them to a cooling rack.
