Fun & festive Christmas Tree Cookies are 3D Christmas trees in cookie form! Stacked layers of soft sugar cookies and green frosting, complete with sprinkles for ornaments complete the look of these cute holiday trees.
1 ¼cupgranulated sugarplus some for rolling the cookies
¼cupbrown sugar
1cupbutter softened
2eggs
1teaspoonvanilla extract
1teaspoonalmond extract
Frosting:
1cupbutterroom temperature
4cupspowdered sugarsifted
2Tablespoonsheavy cream
1teaspoonclear vanilla
Green food coloring
Christmas sprinkles
Instructions
Sugar Cookies:
Preheat the oven to 350° and line a cookie sheet with parchment paper, then spray with nonstick cooking spray.
Combine the flour, soda, baking powder, and salt together in a small bowl.
Add the sugars, and butter to a large mixing bowl. Using a hand mixer, beat until well combined.
Add the eggs, vanilla and almond flavoring and beat well.
Gradually add the flour while beating, just till combined.
Roll 24 of each: 1 teaspoon, 2 teaspoons and 3 teaspoons sized balls. Err on the side of smaller for each. They will get a little bigger.
Roll each cookie in sugar and place spread apart on the cookie sheet.
Using a flat bottom of a cup, gently press the ball. Not too flat though.
Place the pan in the oven and bake for 7 to 8 minutes. Remove from the oven and allow to cool on the pan for 5 minutes, then remove and place on a cooling rack until completely cooled.
Frosting:
In a mixing bowl, beat the butter and powdered sugar together, then add the cream and vanilla. Beat well.
Add 4 drops of green food coloring and beat. Gradually add a drop or 2 more until desired color is reached.
Use a piping bag with a star tip, or you can use a ziplock bag with a small corner snipped off, fill it 2/3rds full of frosting.
When the cookies have completely cooled, pipe a thick circle around the outer edge of a large cookie. Place a middle sized cookie on top of the icing, and pipe the icing around the cookie. Place the smallest sized cookie on top and pipe a circle and then lift up in the middle to make the tree top.
Finish by decorating the trees with tree toppers and little balls or other sprinkles. You can sprinkle fine sanding sugar over the trees and it gives a snowy effect.
