– 1 ½ cups sugar – 1 cup butter softened to room temp – 8 oz strawberry cream cheese – 1 egg – 1 tsp vanilla extract – ½ tsp almond extract – 3 ½ cups flour – 1 tsp baking powder – 1 cup freeze dried strawberries blended – 3 TBSP granulated sugar for coating the cookie dough
In a large bowl, mix sugar, butter, cream cheese together for about 2-3 minutes with an electric mixer.
Add egg, vanilla and almond extract and mix for another 1-2 minutes.
Add the flour, baking powder and blended strawberries & stir until dough is evenly mixed.
Then, scoop out tablespoons of dough and roll it into a ball. Roll in the 3TBSP of sugar.
Then, place on the cookie sheet and use the bottom of a measuring cup or glass to flatten the ball to a 1/4" thickness.
Bake for 8-10 minutes…just until barely turning golden on edges. Cool on cookie sheets for about 5-10 minutes before transferring to a wire rack to cool completely.
