Prep: Preheat oven to 350°F. Line two baking trays with parchment paper and set aside.
Cookie dough: In a large mixing bowl; whisk together butter and sugar for about 1 minute. Add peanut butter and vanilla extract; mix again for 1 minute.
Add oats, flour, banana,milk, baking powder and salt. Mix until ingredients combine. Fold in trail mix.
Bake: Use a medium cookie scoop to make 1.5 TBSP balls of dough. Place on baking tray. With slightly wet hands, gently press cookie dough balls down to flatten them a bit.
Bake for 9-11 minutes.
Let cookies cool on trays for about 2-3 minutes, then transfer to a cooling rack. Enjoy!
