Grandma's Peanut Butter Cookies are a delicious and easy-to-make treat that is sure to make you feel nostalgic! To make this easy peanut butter cookies recipe, all you need is a few simple ingredients: peanut butter, flour, sugar, butter, eggs, vanilla extract, and baking soda.
Prep: Preheat oven to 325°F. Line two baking sheets with parchment paper and set them aside.
Dough: Using a hand or stand mixer, cream the butter, shortening and peanut butter together for 2 minutes in a large mixing bowl.
Add in the white and brown sugars and mix another 2 minutes. Add eggs, one at a time, while continuing to mix.
In a separate mixing bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the peanut butter mixture while mixing well between additions.
Bake: Drop by rounded tablespoonfuls onto prepared baking sheet. Wet a fork and dip it in 3 TBSP granulated sugar. Criss cross on top of each cookie dough ball, re-wetting the fork and continually dipping in the sugar, so that each cookie has some on top.
Bake for 13-14 minutes. Let cool for 2 minutes on tray, then transfer to a cooling rack. Enjoy!
