Peppermint Oreo Cookies are made with pudding mix, Oreo cookies, crushed candy canes and peppermint extract. This delicious peppermint cookie recipe yields a perfectly soft and chewy cookie that is sure to be a favorite holiday cookie!
15Oreo cookiescoarsely crushed (you want big chunks!) - I used the holiday variety in this batch which contributed a lovely red color to the cookies, but you could also use the Peppermint Oreos, or even just regular ones!
Instructions
Preheat oven to 350°.
Using a hand mixer or stand mixer, cream the butter and sugars for 2-3 minutes. Add the pudding mix and mix until well blended.
Add the eggs, vanilla and peppermint extract and mix for another 1-2 minutes.
Add the flour and baking soda and mix just until combined.
Stir in the crushed candy canes and Oreo cookie chunks with a wooden spoon or spatula.
Drop cookies by rounded teaspoonfuls (I use a cookie scoop) onto a greased cookie sheet or one that has been lined with parchment paper or a silicone baking mat. Bake for 8-10 minutes.
Let the cookies cool on a baking sheet for about 4-5 minutes before transferring to a wire rack to cool completely. Although they really are even more amazing when they are warm!
