Ingredients

all purpose flour

3.4oz box dry instant vanilla pudding mix

teaspoon
baking soda

kosher salt

butter
softened to room temperature

cup
brown sugar
⅓

white granulated sugar

teaspoon
vanilla extract

large egg
1
egg yolk
1
cup
funfetti sprinkles
1
cup
white chocolate chips
Instructions
Preheat oven to 350° and grease a large baking sheet or line with parchment paper.
Mix together the flour, dry vanilla pudding mix, baking soda and salt in a medium sized bowl and set aside.
Beat together the softened butter, brown sugar, granulated sugar and vanilla for 2-3 minutes.
Add the eggs into the butter mixture and beat for another 2-3 minutes until light and fluffy.
Stir the flour mixture slowly into the butter mixture and mix just until combined.
Fold the sprinkles and white chocolate chips into the mixture.
Use a cookie scoop to drop rounded tablespoons of the batter onto the prepared baking sheet.
Bake in the oven for 10-12 minutes or until the cookies are a light golden brown. Don't overbake!
Let the cookies cool for about 5 minutes on the baking sheets before transferring cookies to a wire rack to cool.
Serve immediately or store in an airtight container until ready to serve.
