Loaded Chocolate Toffee Cookies made with double the chocolate and toffee! Great chocolate flavor & buttery toffee crunch in this simple toffee cookie recipe!
Line two baking sheets with parchment paper, set aside.
In a large mixing bowl, or the bowl of a stand mixer, mix together the softened butter and white and brown sugars.
Add in the vanilla extract and both eggs, whip the mixture until it is light and fluffy.
Add in the cocoa powder, salt, and baking soda, mix well.
Slowly add in the flour a half of a ½ cup at a time and mix until no white is showing.
Add in the chocolate chips, toffee bits, and heath bits. Give one last big mix so that all of the bits are combined.
Using a cookie scoop or a tablespoon, scoop out dough and place onto the lined cookie sheets leaving space between each ball.
For extra special cookies you can sprinkle a little extra toffee, chocolate chips, and sea salt onto each dough ball before placing the cookie sheets in the oven for 8-10 minutes.
Remove the cookies from the oven and carefully but firmly drop the tray of cookies onto your counter from about 6-8 inches high, do this two to three times then transfer the cookies to a cooling rack.This step is for aesthetics only, it collapses the cookies and creates a crinkled look. It is not necessary, feel free to skip this step if you like.
Serve immediately or store in an airtight container! Enjoy!
