Instructions
Prep: Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
Dough: Start by pouring your cake mix into a large mixing bowl. Add in the buttermilk, egg and butter. Mix using a hand mixer or a stand mixer until fully combined.
Scoop and Bake: Use a large cookie scoop and scoop the dough into balls, placing them onto a parchment-lined baking sheet as you go.
Bake for 9-11 minutes or until the edges are golden brown.
Once the cookies come out, they may be quite fluffy and ball like. Using a spoon, press down the cookie to flatten it. Allow cookies to cool while preparing the icing.
Frosting: Start with the icing by placing the butter and cream cheese in a medium sized mixing bowl. Beat until smooth and creamy.
Add in the vanilla and heavy whipping cream and mix until fully incorporated. Add in the powdered sugar ¼ cup at a time. Mix well.
Decorate: Once fully mixed, place icing into a piping bag or just drizzle icing onto cookies with a spoon. Top with Valentine's sprinkles before the icing sets. Enjoy!
