Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
Make the apple filling: Combine diced apples, cinnamon, and brown sugar in a small bowl. Stir until evenly coated; set aside so the flavors meld.
Prepare the cookie dough: In a large bowl, mix flour, powdered sugar, cornstarch, salt, butter, and vanilla until a soft dough forms. Use your hands to work in the butter for a uniform texture.
Roll and cut: On a lightly floured surface, roll the dough to about ⅓-inch thickness. Cut into rounds using a 2 ½-inch cookie cutter.
Shape the centers: Transfer cookies to the baking sheet and press shallow cavities into the center with your thumb or the back of a spoon.
Add filling: Spoon the apple mixture evenly into each cavity.
Make the crumble topping: In another bowl, combine oats, flour, cinnamon, brown sugar, and butter until crumbly.
Assemble and bake: Sprinkle crumble over the apples, then bake for about 16 minutes, or until the bottoms are lightly golden and the topping is crisp.
Cool and finish: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Drizzle with caramel while still slightly warm.
