Brown Sugar Oatmeal Cookies are a chewy sweet treat that are packed with incredible flavor. Made from scratch and topped with a brown sugar icing, these oatmeal cookies are simply delightful.
Prep: Preheat the oven to 300 degrees F. Then, line a baking sheet with parchment paper and set it aside.
Make dough: In a large bowl, whisk together the butter, shortening, both the white and brown sugar, egg, and vanilla extract for 2 minutes in. Next, add in the flour, oats, and salt. Mix again to combine well.
Bake: Proceed to scoop the dough into round balls using a medium-sized cookie scoop and gently flatten the dough with your hands before placing it onto the baking sheet.
Place the cookie sheet into the preheated oven and bake for 10-12 minutes. Be sure to allow the cookies to cool on the baking sheet for 3-5 minutes before transferring to a wire cooling rack.
Icing: In a saucepan, over medium heat, melt the butter. Next, whisk in the brown sugar and cook, for 2 minutes, stirring constantly. Reduce the heat and add in the powder sugar, milk and vanilla extract. Whisk together until smooth while keeping the pan on the stove for another 3-4 minutes.
Remove the pan from the heat and let cool for about 5 minutes, spoon the icing over the top of the cooled cookies. Allow the icing to cool and set, then serve and enjoy!

These oatmeal cookies will stay fresh for up to 5 days if stored in an airtight container at room temperature.For longer storage, place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
