Caramel Coconut No-Bake Cookies are made with brown sugar, honey, cream, toasted shredded coconut, and oats. A unique twist on traditional no-bake cookies!
Melt the butter in a medium saucepan over medium heat, then add brown sugar, honey, and salt. Stir constantly until the mixture bubbles. Let it simmer for 3 minutes.
Remove from heat, stir in heavy cream and vanilla extract. Mix well.
In a large bowl, mix the toasted coconut, oats, and nuts (if using). Pour the warm caramel over the mixture and stir until fully coated.
Drop spoonfuls onto the prepared baking sheet and sprinkle with flaky sea salt.
Allow the cookies to cool at room temperature for 30 minutes until firm. For faster setting, refrigerate for 15 minutes.
