Chocolate Peanut Butter Swirl Cookies are soft, chewy, and delicious! These rich chocolate cookies have a swirl of peanut butter and a sprinkling of mini chocolate chips on top.
Preheat oven to 350° and line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, cream together the butter and sugar for 3-4 minutes. Add the eggs and vanilla and beat for 2-3 more minutes.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Add the dry ingredients to the wet ones and stir just until combined.
In a small bowl, microwave the peanut butter for about 20 seconds.
Use a cookie scoop to place balls of dough on the prepared cookie sheet. Use a small spoon to add tiny amounts of peanut butter onto each ball and then gently swirl the peanut butter into the dough with a toothpick.
Press a few mini chocolate chips into the top of each cookie dough ball.
Bake for 10-12 minutes. Let cookies cool for about 5 minutes before transferring to a wire rack to cool completely.
