Ingredients

semisweet chocolate chips

packed light brown sugar

vanilla extract

shredded and drained zucchini

semisweet chocolate chips
Instructions
Preheat oven to 325°F and line baking sheets with parchment or silicone mats.
Melt ⅔ cup chocolate chips in 45-second bursts, stirring until smooth. Cool for about 5-10 minutes before adding to the other ingredients.
Whisk flour, cocoa powder, baking soda, and salt in a separate bowl.
In a mixing bowl, beat butter and sugars for 2-3 minutes. Add egg and vanilla and beat for another 2-3 minutes.
Mix in shredded zucchini.
Stir in the cooled, melted chocolate.
Add dry ingredients and mix until nearly combined. Stir in the remaining cup of chocolate chips.
Scoop dough into tablespoon-sized balls, 2 inches apart.
Bake 10–11 minutes, just until set. Cool on the pan for about 5 minutes before transferring to a wire rack to cool completely.
