Preheat oven to 350℉ and line two baking sheets with parchment paper.
Cream together the butter, sugar, and vanilla. Stir in the flour, baking powder, and baking soda, until well combined. Fold in ¼ cup of the sprinkles. Place the rest of the sprinkles in a small bowl.
Scoop out the dough using a 2 tablespoon cookie scoop. Roll each cookie dough ball into the remaining sprinkles and place on your baking sheet. Slightly press the cookie dough balls down to flatten them.
Bake for 10-12 minutes. Let cool about 2 minutes on baking sheet, then transfer to a cooling rack to fully cool. Serve & enjoy!
