Copycat Star Crunch Cookies are even better than Little Debbie's! These no-bake chocolate caramel cookies combine gooey marshmallow with crispy rice cereal, creating an irresistible texture and flavor that outshines the store-bought version.

Prep: Line 2-3 baking trays with parchment paper; set aside.
Cookie mixture: In a large saucepan, combine the caramel bits, butter, semi sweet chocolate chips, and milk. Stir gently over low heat until melted. It helps to mash the caramel bits with the underside of a spoon to help them melt. It should take about 5-10 minutes until the mixture is smooth.
Add the mini marshmallows and stir until everything is melted and combined.
Remove pan from heat and pour in the Rice Krispie cereal. Stir until everything is well coated in the chocolate.
Shape & cool: Use a large cookie scoop or ¼ cup measuring cup to scoop out some of the cookie mixture and transfer it to the prepared trays. Gently press the top of the cookies to flatten. Repeat until all the mixture is used; it should yield about 18-20 cookies.
Let the cookies cool to set. To quicken the process, you can place them in the fridge or freezer for about 30 minutes. Take them out the fridge/freezer and let sit for 5 minutes, serve and enjoy!

Store no-bake chocolate marshmallow cookies in an airtight container on the counter for 3-4 days.
