Copycat Nilla Wafer Cookies are a light and crispy treat that are perfect for snacking, dipping, or using in your favorite dessert recipes. While store-bought vanilla wafers are readily available, making your own at home can be a fun and satisfying experience.
Prep: Line baking sheets with parchment paper and set aside.
Dough: In a medium bowl, sift together flour, cornstarch, baking powder and salt; set aside.
Then in a large mixing bowl, beat butter and sugar on medium speed until creamy, about 5 minutes. Turn mixer to low and beat in egg, vanilla and milk until completely combined.
Add the flour mixture to the butter mixture and mix until combined. The dough should be smooth.
Shape & chill: Roll dough into 1" balls. Divide dough in half and roll each half into a ball. Place on prepared cookie sheets. Cover and let chill in fridge at least 1 hour.
Bake: Preheat oven to 350°F. Remove from fridge and space cookies out 2" apart.
Bake for 11-12 minutes or until cookies are light golden brown around the edges. Allow to cool for 2 minutes on baking sheet then transfer to cooling rack to cool completely. Enjoy!

Copycat Vanilla Wafter Cookies can last up to a week when stored in an airtight container at room temperature.For longer storage, place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
