These Easy Palmiers are made with just puff pastry and sugar for the simplest French cookie ever. Crisp, buttery, and beautifully caramelized, they come together in minutes.
Thaw your puff pastry on the countertop and preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
Coat your table or counter in sugar and lay your puff pastry sheet on the top of the sugar. Turn the pastry over and add more sugar to coat both sides, gently pressing it in to uncoated areas.
Tuck and roll one side to the middle, and then the other side. Repeat so that you have a little tube of pastry.
Cut into ⅓" pieces and roll them around in more sugar before laying onto a prepared baking sheet.
Bake for 10-15 minutes until pale brown on top and a darker brown on the bottom. Cool for 10 minutes on the tray. Transfer to a cooling rack to cool completely. Serve & enjoy!

Thaw at room temperature, then crisp them in a 350°F oven for 3–4 minutes if needed.
