Lemon Pudding Sugar Cookies are soft, chewy, and bursting with citrusy flavor. The addition of lemon pudding mix gives these cookies a light, zesty taste and an extra moist texture that sets them apart from traditional sugar cookies.
In a large bowl, cream the butter, oil, and sugars for at least 2-3 minutes. Add the eggs, vanilla, and pudding mix and beat for another 2-3 minutes.
In a separate bowl, mix the flour, cream of tartar, and baking soda. Add the dry ingredients to the creamed mixture and mix just until combined.
Use a cookie scoop to scoop tablespoonfuls of dough and then roll them before placing them on a prepared baking sheet. Spray the bottom of a glass with cooking spray and dip it in granulated sugar. Gently press each ball of cookie dough with the bottom of the glass.
Bake the cookies for 10-12 minutes or until the edges begin to brown. Cool for a few minutes before transferring to a wire rack to cool completely.
