Instructions
Prep: Preheat the oven to 400°F. Line two baking sheets with parchment and set aside.
Batter: In a large bowl cream the butter and sugar until light and fluffy. Add the eggs and vanilla extract, mix until combined.
Add in the flour and baking soda until well combined.
Separate the dough evenly into 3 bowls. Add 2 tablespoons of lime jello mix to a bowl, 2 tablespoons orange jello mix to another, and 2 tablespoons grape jello mix to another.
Add 2-3 drops of food coloring to the corresponding bowl. Mix together until the color and jello is mixed into the dough evenly.
Shape: Roll your dough into about 1 ½ inch balls and roll them into a bowl of sugar for dusting. Place the dough on a large parchment lined sheet. Flatten the cookies slightly and add the candy eyes.
Bake: Place the cookies in the preheated oven and bake 8-10 minutes, or until the cookies are just golden on the bottom. Let the cookies cool slightly on the baking sheet until transferring them to a rack to cool. Serve & enjoy!

These monster Jello cookies will stay fresh for up to 3-5 days if stored in an airtight container at room temperature.For longer storage, place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
