Monster Jello Cookies
Colorful Monster Jello Cookies are a fun, festive Halloween treat. Chewy butter cookies are rolled in sugar and topped with candy eyes!

Ingredients
- 1 cup sugar plus more for rolling
- ⅔ cup butter softened
- 2 eggs
- 1 tsp vanilla extract
- 3 cups flour
- 1 tsp baking soda
- 6 TBSP Jello mix 2 TBSP each, lime, orange and grape flavors
- Food coloring orange, purple, & green
- Candy eyeballs
Instructions
- Prep: Preheat the oven to 400°F. Line two baking sheets with parchment and set aside.
- Batter: In a large bowl cream the butter and sugar until light and fluffy. Add the eggs and vanilla extract, mix until combined.
- Add in the flour and baking soda until well combined.
- Separate the dough evenly into 3 bowls. Add 2 tablespoons of lime jello mix to a bowl, 2 tablespoons orange jello mix to another, and 2 tablespoons grape jello mix to another.
- Add 2-3 drops of food coloring to the corresponding bowl. Mix together until the color and jello is mixed into the dough evenly.
- Shape: Roll your dough into about 1 ½ inch balls and roll them into a bowl of sugar for dusting. Place the dough on a large parchment lined sheet. Flatten the cookies slightly and add the candy eyes.
- Bake: Place the cookies in the preheated oven and bake 8-10 minutes, or until the cookies are just golden on the bottom. Let the cookies cool slightly on the baking sheet until transferring them to a rack to cool. Serve & enjoy!
Notes
These monster Jello cookies will stay fresh for up to 3-5 days if stored in an airtight container at room temperature.
For longer storage, place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
