Prep: Line a cookie sheet with parchment paper and set aside.
Cookie dough: Mix together the rice krispies and marshmallows in your bowl and set aside.
Melt the white chocolate and peanut butter in a medium sized saucepan over medium-low heat, stir constantly and do not raise heat above medium to help avoid burning.
Once melted, pour mixture on top the cereal and marshmallows and gently stir until well combined.
Shape & chill: Using a medium (1.5 TBSP) cookie scoop, portion out the mixture in two tablespoon balls and place on the cookie sheet, at least 1 inch apart.
Sprinkle the mini chocolate chips generously on top of all of the avalanche cookies and let set at least 1 hour before serving. Enjoy!
