Oatmeal Toffee Pecan Cookies are a delightful treat that are packed with amazing flavor and texture! The combination of oats, toffee bits, and pecans creates a unique taste that is sure to please any palate.
Prep: Preheat the oven to 375°F. Line two baking sheets with parchment paper and set aside.
Cookie dough: In a large bowl, with an electric mixer, beat the butter on medium speed for 2 minutes. Add the sugar and beat for another 2 minutes.
Add in the eggs and vanilla extract, mix once more until combined.
In a separate bowl, whisk the oats, flour, baking soda, and salt. Add the dry mixture to the wet ingredients, mixing just until combined. Stir in the pecans and toffee bits.
Bake: Use a 1.5 TBSP medium scoop to scoop cookie dough onto the prepared baking sheets. Bake cookies for 10 minutes. Transfer the cookies to cooling racks after removing from oven. Serve cookies slightly warm and enjoy!

The cookies will stay fresh for up to 5 days if stored properly. Store the cookies in an airtight container at room temperature.Or place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
