Dough: Whisk the flour, baking powder, and salt in a medium sized mixing bowl. Set it aside.
In a separate large mixing bowl, cream the butter and both sugars using an electric handheld mixer or stand mixer, beat until smooth. Add in the egg and vanilla extract and mix again until smooth.
Fold in dry ingredients, mixing until smooth. A thick and smooth dough will form, then separate the dough into two equal parts.
Add gel food coloring (starting with 3-4 drops of gel) to one part of the dough. Blend until a solid light to medium pink color forms.
Layer & shape dough: Roll each piece of dough out flat using a rolling pin over a floured surface to about ¼ inch thick.
Layer dough one on top of one another. Use a pizza cutter to cut out a 9x13” rectangle, making both layers the equal in size. Set aside excess dough, separating colors. With the excess dough, repeat the rolling process to use all the dough.
Very carefully begin at one long side of the rectangle and roll tightly, moving slowly to keep the log straight.
Lay a sheet of plastic wrap down and add sprinkles. Place the rolled dough onto the sprinkles, evenly coating the outside.
Chill: Once coated with sprinkles, wrap tightly in plastic wrap. Allow to chill for 2 hours.
Bake: After 1 ½ hours chill time, prepare a baking sheet by lining with parchment paper and preheat the oven to 350°F.
Unwrap the log, then use a sharp knife to cut ½ inch cookies from the log and place them onto the prepared baking sheet.
Bake cookies for 12-13 minutes or until the cookies are just set. Allow cookies to cool on the baking sheet for 1 minute before transferring to a wire cooling rack. The cookies are best served warm or at room temperature, enjoy!

These pinwheel cookies will stay fresh for up to 5 days if stored in an airtight container at room temperature.Place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
