Cooke dough: In a large bowl, cream the butter and sugar using an electric mixer. Add the peanut butter and strawberry jam. Beat again until combined.
Add egg and vanilla. Beat until smooth.
In a separate small bowl, whisk the flour, baking powder, baking soda and salt together. Add the dry ingredients to the butter mixture in 2 additions, mixing well after each addition until no dry flour streaks remain.
Add in the peanuts and stir well.
Chill dough: Divide the dough into 2 equal portions and shape each portion into an 8-inch-long log. Wrap each log with plastic wrap and place in the refrigerator to chill for at least 6 hours.
Bake: Get the oven preheating to 350°F and line baking sheets with parchment paper.
Grab the cookie dough from the fridge and discard the plastic wrap from each log. Cut the cookie dough into ¼ inch slices and arrange about 2 inches apart on the prepared baking sheets.
Bake for about 12 minutes until golden. Let them stand on the cookie sheets for 5 minutes before removing to wire rack to cool completely. Serve and enjoy!

PB&J cookies will stay fresh for up to 5 days if stored in an airtight container at room temperature.Or you can place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
