Peanut Butter Surprise Cookies are soft and chewy with a surprise caramel center that oozes out with every bite. The combination of peanut butter and caramel creates a rich and decadent flavor that is sure to satisfy any sweet tooth.
Cookie dough: In a mixing bowl, cream together the shortening, peanut butter, 1 ½ cups of granulated sugar and brown sugar until well mixed. Add eggs, one at a time, beating well after each addition.
In a separate bowl, whisk together the dry ingredients; gradually add to the creamed mixture.
Chill dough: Cover the bowl and place it in the refrigerator for at least 1 hour to chill.
Shape: When the dough is nearing the end of the chilling period, preheat the oven to 350°. Then, line two baking sheets with parchment paper or silicon mats and set them aside.
Place remaining 1/2 cup granulated sugar in a shallow bowl. Use a medium 1.5 TBSP cookie scoop to scoop a level portion of dough. Place a Milk Dud in the center and form dough around it. Roll into a ball, then roll in sugar.
Bake: Place 2 inches apart on parchment lined baking sheets. Bake at 350° for 10-12 minutes. Cool for 5 minutes before moving to wire racks. Enjoy!
