Soft and chewy buttery brown sugar cookies topped with brown sugar icing. These cookies are an easy to make dessert and a perfect spin on the classic sugar cookie recipes.
Preheat oven to 300°F. Line a baking tray with parchment paper and set aside.
In a large mixing bowl, whisk butter, sugars & vanilla for 2 minutes. Add in flour and salt, then mix again.
Dust a clean countertop with flour and roll dough out to between 1/2" and 1/4" in thickness. Cut rounds using a 2" round cookie cutter. Place on baking tray.
Bake 20-22 minutes. Let cool on the tray for about 3-5 minutes, then transfer to a cooling rack to fully cool.
To make the brown sugar icing
Melt butter in a saucepan on the stove over medium heat. Add in brown sugar and whisk for 2 minutes.
Reduce heat, then add remaining ingredients. Whisk until smooth, keeping pan on stove for another 3-4 minutes.
Remove from heat. Spoon icing on cooled cookies. Let cool to set. Enjoy!
Notes
If you use a 2" cookie cutter, recipe will yield about 4 dozen cookies.
