Iced Cinnamon Pumpkin Cookies
are soft & pillowy pumpkin cookies topped with a simple vanilla icing and cinnamon. Lovely texture & flavor in these homemade pumpkin sugar cookies.

Ingredients

sugar

butter, softened

tsp
vanilla

pumpkin puree

salt

baking soda

pumpkin pie spice

flour
Vanilla Icing
2
tbsp
soft butter
1
cup
powdered sugar
1-2
tbsp
milk
1/2
tsp
vanilla
cinnamon
for dusting
Instructions
To make the cookie dough, cream together the sugar and butter.
Add the egg, vanilla & pumpkin puree.
In a separate bowl, combine the flour, salt, baking soda.
Add the flour mixture to the butter mixture, beating until smooth.
Chill the dough for several hours before scooping dough with a medium cookie scoop.
Place on a baking sheet and bake at 375F degrees for 10 minutes, being careful not to overbake.
After the cookies have finished cooling down, spoon with vanilla icing & dust with cinnamon.
How to make Vanilla Icing
In a small bowl, melt the butter.
Slowly add in and beat the other ingredients until the frosting is smooth. This should take a minute or so.
Add in any additional milk if a thinner consistency is needed.
