In a small skillet add your diced apples, butter, brown sugar and cinnamon. Let cook over medium heat for 8-10 minutes until the apples are tender. Stir in your cornstarch and cook another minute until thickened, set aside.
In a large bowl cream together the butter and both sugars until fluffy. Beat in the egg, and vanilla.
Add in the flour, baking powder and salt. Mix until just combined. The dough will be very crumbly.
Divide the dough into 6 equal portions. Form each portion into a ball. Press an indention in the middle of each ball to create a bowl shape for the filling to go in. Dust with cinnamon sugar, if desired. Refrigerate for at least 30 minutes.
Meanwhile preheat the oven to 375 degrees.
Fill each cookie indentation with a little of the apple pie filling. Bake the cookies for 18 minutes. Cool 5 minutes and then transfer to a rack. Drizzle with caramel, then serve!

Recipe yields 6 large cookies. You can divide the dough into 12 portions for smaller cookies, if desired. Just reduce the baking time to 11-12 minutes instead.
