S'mores Brownie Mix Cookies made with brownie mix, graham crackers, and marshmallows. A deliciously easy cookie recipe that tastes like your favorite summer treat!
Preheat the oven to 375° and line a couple of baking sheets with parchment paper or a silicone baking mat.
MAKE THE COOKIES
In a large bowl, combine the brownie mix and flour.
Use a hand mixer or fork to stir in all of the wet ingredients (eggs, melted butter, chocolate syrup, and vanilla).
Fold in the chocolate chips.
Using a 1 tablespoon cookie scoop, scoop cookie dough balls and arrange the cookie dough balls on the prepared baking sheet about 2” apart. Bake for 7 minutes.
While the cookies are baking, break your graham crackers into small squares (each graham cracker should be broken into 8 smaller squares), break your chocolate into pieces, and cut your marshmallows in half.
ADD GRAHAM CRACKERS AND CHOCOLATE BARS
Remove the cookies from the oven and use a spatula to slide a graham cracker under each cookie.
Put half of a marshmallow (cut side down) on the top of the cookie and gently press it into the cookie.
Turn the oven broiler on high and place the cookies back in the oven for around 1 minute - watch them closely because this can take seconds to a little over a minute depending on your broiler.
Remove the cookies from the oven as soon as the marshmallow starts to brown.
Let the cookies cool for a few minutes on the baking sheet before topping with a piece of chocolate bar.
If you'd like, you can sprinkle some graham cracker crumbs on top.
