Toffee Almond Sandies are a delectable treat that combines the rich & buttery flavor of toffee with the crunch of almonds. Toffee cookies are easy to make and require only a few ingredients, making them a perfect option for those who want to whip up a quick and delicious dessert.
Dough: In a large mixing bowl, cream the butter, shortening and both sugars. Add the egg, beat well. Mix in the almond extract.
In a separate bowl, whisk the flour, baking soda, cream of tartar and salt; gradually add this dry mixture to the creamed butter mixture.
Stir in the almonds and toffee bits. Be careful not to overmix, stir until just combined.
Bake: Drop the dough by teaspoonfuls two inches apart onto ungreased baking sheets. Place them in the preheated oven and bake for 10-12 minutes or until golden brown.
Remove the cookies from the baking sheet to wire racks to cool completely. Serve immediately and enjoy!
