Caramel Chocolate Chip Cookies need to be a staple in every home, not just ours. Happy National Chocolate Chip Cookie Day! What a fun treat to celebrate. We make chocolate chip cookies at least once a month and each batch doesn’t last long! I took one simple ingredient and made our favorite chocolate chip cookie recipe even better. Caramel. Seriously! It’s a no-brainer- you’ve got to try them.
Caramel Chocolate Chip Cookies ingredients
Here’s what you’ll need to make these cookies:
–softened butter- I use 1/2 salted butter, but you can use unsalted if you prefer
–butter flavored shortening- can be found on the baking aisle. I prefer the cubes that you can cut to specific measurements, in this case, 1/2 cup.
–brown sugar & granulated sugar: you’ll need 3/4 cup of each
–2 eggs
— all purpose flour: You’ll use 2.5 cups of flour. You can use bread flour as well.
–salt, baking soda & baking powder: for flavor & leavening
–semi-sweet chocolate chips: you’ll use 3/4 cup regular semi-sweet chocolate chips. Feel free to use chocolate chunks instead!
–salted caramel chips: these are getting much easier to find year round! If you can’t find them, sub in butterscotch chips instead.
–SOFT caramels- You’ll want to look for the bags of Werther’s SOFT Caramels. I find these often in the grocery store checkout lane. Make sure they’re the SOFT caramels! You’ll need 2 bags.
How to Make Caramel Stuffed Cookies
Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper. {I use these parchment sheets– love them!}
Using an electric mixer, cream together the butter and shortening. Add in sugars and eggs and mix once more.
Add in 1/2 the flour, the baking soda, baking powder and salt. Mix well. Add in remaining flour and mix until combined. Stir in chocolate chips and salted caramel chips. {If you can’t find these, just use 1 1/2 cups semi sweet chips instead. I find them at my local Kroger grocery store and they’re heavenly!}
Scoop heaping tablespoons of dough (I use this cookie scoop here) and take 1 unwrapped caramel and stuff it in the center. Adjust the dough around the caramel so that it’s covered completely.
Place 9 balls of dough on a cookie sheet and bake for 9-10 minutes.
Once baked, transfer to a cooling rack. Let cool a few minutes and ENJOY!
Can you Freeze Cookies?
I love freezing cookies! There are 2 ways I prefer to freeze them. The first is by freezing the unbaked cookie dough balls. I scoop & shape the balls round with my hands, then freeze them in 1 layer on a cookie sheet. You can position them as close together as possible without touching. Freeze, then once solid, transfer them to a ziplock freezer bag. Then you can pull them out and bake them whenever you want! You’ll want to either let them thaw on a cookie sheet while preheating the oven, or add a couple minutes to the bake time to compensate for frozen cookie dough.
The second way is to just freeze the baked cookies. My mother in law does this ALL the time. They turn out pretty well, albeit a tiny bit drier and more crumbly once thawed. Oh and you’ve got to make sure you thaw them. Frozen cookies are pretty hard to eat. Thankfully, they only take about 20 minutes or so to thaw out.
