These blossom cookies are soft and chewy and packed with chocolate! Pastel sprinkles make these cookies perfect for Easter, but you can change up the sprinkles to fit any holiday or occasion.
EASTER BROWNIE BLOSSOM COOKIES
Easter Brownie Blossom cookies couldn’t be easier to make. And they have TONS of chocolate in them! Use a brownie mix for the base of the cookie dough and then add chocolate syrup and mini chocolate chips. Roll the cookie dough balls in pastel sprinkles and then bake. Immediately after baking, press a Hershey’s Kiss in the middle. These cookies are essential for all chocolate lovers!
Ingredients in Easter Brownie Blossom Cookies
Brownie mix – The recipe calls for 1 box of dark chocolate brownie mix, but you can use a milk chocolate or fudge brownie mix if you prefer. Use one that is about 18 ounces, made for a 9X13 pan.
Flour – You will need to add just a little bit of flour to the brownie mix to get the cookies to the right consistency.
Eggs – Two large eggs will help to bind all of the other ingredients together.
Butter – Melted butter will provide most of the liquid for the cookie dough. For best results, use real butter.
Chocolate syrup – Just one tablespoon of chocolate syrup adds more chocolate flavor to the cookies and adds to the texture as well.
Vanilla – The higher the quality of the vanilla, the better.
Mini chocolate chips – A cup of mini chocolate chips is mixed into the cookie dough for texture and of course, more chocolate!
Sprinkles – You will need 1 cup of holiday sprinkles. Be sure to use “Jimmies Sprinkles”, which are the straight line sprinkles, or the little ball sprinkles called “nonpareils”. If your sprinkles are too thick they will melt in the oven so stay away from the shaped sprinkles like stars and hearts.
Hershey’s Kisses – You will need about 36 chocolate Hershey’s Kisses, depending on how many cookies you make. You can use any variety of Hershey’s Kisses that you want!
How to make Easter Brownie Blossom Cookies
Preheat the oven to 375° and line a baking sheet with parchment paper.
MAKE THE COOKIE DOUGH
Mix the brownie mix and all-purpose flour in a large mixing bowl until combined.
Add the eggs, melted butter, chocolate syrup, and vanilla to the brownie mix/flour mixture and mix until just combined.
Fold in the mini chocolate chips.
SCOOP & BAKE THE DOUGH
Use a one-tablespoon cookie scoop to create balls of cookie dough.
Roll each cookie dough ball in the holiday sprinkles and place them on the prepared baking sheet about 1.5” apart.
ADD THE HERSHEY’S KISS
Bake the cookies for 8 minutes, then remove them from the oven and let them cool for about 3 minutes before pressing one chocolate kiss in the middle of each cookie.
Let the cookies cool on the baking sheet for about 5 more minutes and then transfer them to a wire baking rack to cool completely.
HOW LONG ARE EASTER BROWNIE BLOSSOM COOKIES GOOD FOR?
Easter Brownie Blossom Cookies can be stored in an airtight container at room temperature for up to 5 days. If you want to keep them fresh for longer, you can store them in the refrigerator for 7-10 days or freeze them for up to three months. When freezing, make sure to wrap them tightly in plastic wrap and place them in an airtight container or freezer bag.
