Chocolate Cherry Cookies are a delicious twist on a classic recipe, the combination of maraschino cherries and chocolate chips is simply heavenly. These cherry cookies have rich chocolate flavor and juicy bursts of fruit, they are sure to become a new favorite in your house!
½cupmaraschino cherriesdrained and finely chopped + additional cherries to top the cookies
1 ¼cupall-purpose flour
¼cupunsweetened cocoa powder
½tspbaking powder
¼tspsalt
¼cupunsalted buttersoftened
¾cupgranulated sugar
1largeeggroom temperature
1tspvanilla extract
1cupsemi-sweet chocolate chips+ additional chocolate chips to top the cookies
Instructions
Prep: Preheat your oven to 350 degrees F. Line two baking sheets with parchment paper and set them aside.
Remove the stems and finely chop the cherries. Place them on a paper towel and pat them dry to remove excess moisture.
Dough: In a small bowl whisk the flour, cocoa powder, baking powder, and salt and then set it aside.
In a larger bowl, beat the butter and sugar for 2 minutes, using an electric mixer, until fluffy. Add in the egg and vanilla extract, beat again until combined.
Add in the chopped cherries and semi-sweet chocolate, mixing well with a spatula until combined.
Form 15 cookie dough balls and place them on the prepared baking sheets 2 inches apart. With your palm, press down on the balls to flatten them slightly. Top each cookie with additional cherry pieces and chocolate chips.
Bake: Place the cookies in the preheated oven and bake for 12-15 minutes before transferring to a wire rack to cool completely. Serve and enjoy!
