What are chocolate cherry cookies?
These cookies are double chocolate thumbprint cookies with maraschino cherries chopped in the cookie batter and in the center of the thumbprints (with more chocolate). You can really taste the sweet chocolate combination in every chewy bite. With these maraschino cookies, you can serve them up as a fun Valentine’s day treat, for the holidays, or anytime throughout the year too.
Chocolate cherry cookie ingredients
-Butter: We need 1/4 cup (half a stick) of unsalted butter, softened.
-Flour: With 1 1/4 cups of all-purpose flour we can get a good gluten base for the cookies.
-Sugar: We need 3/4 cups of sugar to get a sweet cookie with nice edges.
-Egg: We just need 1 large egg to bind the cookie together, but it has to be at room temperature. You can warm a cold egg quickly by letting it sit in a bowl of warm water.
-Vanilla: We just need 1 teaspoon of vanilla extract to get a good flavor base for the cookie dough.
-Cocoa powder: Giving us a rich chocolate taste in every bite is 1/4 cups of unsweetened cocoa powder.
-Maraschino cherries: We need 1/2 cup of maraschino cherries, drained and finely chopped to go in the batter, plus more to go on top of the cookies.
-Semi-sweet chocolate chips: We need 3/4 cups of semi-sweet chocolate chips to go in the cookie dough plus more for on top.
-White chocolate chunks: Use about 1/4 cup of white chocolate chunks to go on top of the cookies too.
-Baking powder: This is the leavening agent to make the cookies puff up while baking. We need 1/2 teaspoon to do it.
-Salt: With 1/4 teaspoon of salt we can enhance the flavors in the dough so that these cookies really taste amazing.
How to make chocolate cherry cookies
Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
Whisk together the flour, cocoa, baking powder, and salt in a small bowl and then set it aside.
Finely chop the cherries and place them on a paper towel. Pat them with a paper towel to remove moisture.
Beat together the butter and sugar for 2 minutes in a large bowl until fluffy.
Add in the egg and vanilla extract and then beat again.
Add in the chopped cherries, semi-sweet chocolate, and white chocolate, mixing well with a spatula until combined.
Form 15 cookie dough balls and place them on a baking sheet spaced 2 inches apart.
With your palm, press down on the balls to flatten them slightly.
Top the cookies with additional maraschino cherry pieces and chocolate.
Bake in the oven for 12-15 minutes before transferring to a wire rack to cool completely. Enjoy!
How long are chocolate cherry cookies good for?
These cookies are good for about 3-5 days if stored in an airtight container at room temperature. You could also freeze them for up to 2 months if desired. Just thaw before eating.
