Cream Cheese Red Velvet Cookies combine rich butter, cocoa, and a hint of vanilla with a sweet, creamy center made from cream cheese and powdered sugar. With a pop of red food coloring, these cookies are as fun to make as they are to eat!
Mix the cream cheese and powdered sugar then put in the fridge to chill.
Beat the butter, sugar, and egg together in a large bowl until combined. Add flour, vanilla, baking powder and red gel beat until combined. And finally add cocoa.
Take large 3 TBSP scoops of dough and roll, then flatten gently until about 3-4" inch diameter. Scoop 2 tsp of the cheese mixture to the middle of the cookie dough, then fold the dough over and around the cream cheese, enclosing it inside.
Place 6 on the baking tray, evenly spaced. Bake 14-17 minutes at 350°F. Let cool on pan for about 5 minutes, then transfer to a cooling rack. Enjoy!
