Danish Wedding Cookies are made with butter, pecans, vanilla, cinnamon, and powdered sugar for a rich, buttery cookie with classic holiday flavor. Melt-in-your-mouth cookies that look like little snowballs!
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set it aside.
In a mixing bowl combine the flour and cinnamon in a large bowl.
Using an electric mixer to the dry ingredients mix in the butter, pecans, ½ cup powdered sugar, and vanilla until well combined.
Roll the dough in 1 inch balls and flatten slightly. Place them on the prepared cookie sheet.
Bake for 10-12 minutes until lightly golden. Cool slightly on wire racks.
While still just a little warm roll the cookies in powdered sugar. Enjoy!

Store Danish wedding cookies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.For longer storage, freeze them for up to 2 months. Before serving, let them come to room temperature and, if desired, roll them in a fresh coating of powdered sugar.
