Gumdrop Gingerbread Cookies offer a delightful blend of traditional flavors with a playful twist. Combining rich spices with chewy gumdrops, this soft gingerbread cookies recipe not only brings warmth to the holiday season but also satisfies sweet cravings.
Prep: Preheat the oven to 375degrees F. Line two baking sheets with parchment paper and set it aside. Non-stick cooking spray or a silicon mat can also be used.
Cookie dough: In a mixing bowl, whisk the flour, baking soda, all the spices, and salt until combined. Set aside.
In a large bowl, using an electric mixer, cream the butter, brown sugar, and molasses. Add in the egg and mix again to incorporate. Add the dry flour mixture to the wet mixture and blend on low speed until the dough is smooth.
Using a cookie scoop, portion out the dough into 1-inch-sized balls and place them 2 inches apart on the prepared baking sheet. Press a spiced gumdrop into the center of each ball of dough.
Bake: Place the cookies in the preheated oven and bake for 12 minutes.
