Ingredients
2 ½cupsAll-purpose flour
¾teaspoonBaking soda
½tspsalt
1cupButtersoftened
1 ¾cupGranulated sugar
1largeEgg
2teaspoonsVanilla extract
½cupFreeze-dried Strawberriesblended
¼cupCocoa powder
¼cupmini chocolate chips
1dropred/pink gel food coloroptional
Instructions
Preheat the oven to 350° F and line your tray with parchment paper.
Take a medium-size bowl and mix the flour, salt and baking powder well and set aside.
Take a large bowl and beat the butter along with the sugar until it's light and creamy. Then add the egg and vanilla extract. Beat after each addition.
Add the flour mixture to the butter mixture and mix everything well until it's all combined.
Take this dough and divide it into three parts. One part you'll leave just as it is.
Chocolate dough: To one of the remaining parts of dough, you'll add the cocoa powder and mini chocolate chips. Stir until well combined.
Strawberry dough: To the final part you'll add the freeze-dried strawberry powder. Thoroughly mix together, then decide if you want to add a drop of food color.
For making the cookies, take small portions ( about 1-2 tsp) from each of the dough and press them gently together, mixing them just a bit so that you sww swirls of each individual color. Flatten slightly.
Place them on the prepared tray and bake for 10-12 mins. Let the cookies cool down completely on a cooling rack. Enjoy!
Notes
Transfer cooled cookies to an airtight jar. They stay fresh for about 5 days.Cookies can be frozen up to 2 months.
