In a large saucepan, mix sugar, butter and milk over medium heat. Stirring occasionally, melt and bring to a boil.
Let the mixture boil for 5 minutes, then remove from heat. Add the vanilla and whisk in the pudding until mixture is smooth. Stir in the oats and the crushed Oreos.
Drop dough by spoonfuls onto a cookie sheet lined with wax paper. Let the cookies cool before removing from the wax paper. Serve & enjoy!

Store in an airtight container for 3–4 days at room temperature or up to a week in the fridge.They also freeze well for 2–3 months—just thaw at room temperature before eating.
